Thanksgiving Dinner.

Chocolate Sundae Pie.

Total Time: 35 minutes

  • 1 9" pie crust, baked and cooled
  • 1/4 cup cold water
  • 1 (1/4 oz.) envelope unflavored gelatin (Knox)
  • 3 pasteurized egg yolks
  • 2/3 cup sugar
  • 1/8 tsp. salt
  • 1-1/3 cups whole milk
  • 1/8 tsp. ground nutmeg
  • 3 pasteurized egg whites
  • 1 tsp. vanilla

  Place cold water in a small bowl and sprinkle unflavored gelatin over the water. Set aside.
In large bowl, beat pasteurized egg yolks with a mixer. Gradually add sugar and salt and beat until mixture is fluffy and is light ivory in color.
In large saucepan, heat milk until a skin forms on the surface. Beat in the egg yolk mixture, and cook and stir 3 minutes longer until mixture thickens. Then add softened gelatin and beat with wire whisk until gelatin is completely dissolved. Cool this mixture by setting the saucepan in a large bowl of ice water for 45-60 minutes.
  Beat egg whites until stiff. Using same beaters, whip cold egg yolk/milk mixture until creamy. Add vanilla and beat. Then fold in beaten egg whites. Pour into baked and cooled pie crust and chill overnight. 8 servings
To serve:
  Offer whipped cream, shaved chocolate, fudge sauce, maraschino cherries, chopped nuts and other sundae toppings for guests to pour over pie wedges.

Pumpkin Pie Latte.
Pumpkin Pie Latte.
  It's spicy and thick. The perfect coffee recipe for Thanksgiving. Not just flavoured with cinnamon and allspice, this latte actually contains pureed pumpkin.

  • 1 tbs canned pumpkin
  • 2 tbs vanilla extract
  • 1/4 tsp cinnamon, ground
  • 1 cup milk
  • 1/2 cup strong coffee, or 1/4 cup espresso

  In a saucepan, heat milk and pumpkin until steaming. Stir in vanilla and cinnamon. Put mixture in a blender, and blend for 15-20 seconds until thick and foamy. Pour into tall glass, then add coffee (or espresso). Top with a sprinkling of pumpkin pie spice or ground nutmeg.


Chocolate Kiev.
  Vanilla vodka is a great addition to any coffee or chocolate cocktail. And for Chocolate Kiev, there is also the almond flavour of the amaretto.
Serves 1

  • 1 oz hot cocoa mix
  • 4 oz hot milk
  • 1 oz vanilla vodka
  • 3/4 oz Amaretto

Combine in a mug, and stir well.

Pumpkin Pie.
Pumpkin Pie.
  This is a traditional recipe for pumpkin pie, which begins with solid pack canned pumpkin. Serve it with whipped cream flavored with a bit of cinnamon.

Total Time: 3 hours, 80 minutes
Yield: Serves 8

  • 9" pie crust
  • 15 oz. can solid pack pure pumpkin
  • 3 large eggs
  • 1/2 cup heavy whipping cream
  • 1/2 cup brown sugar
  • 1 tsp. cinnamon
  • 1/2 tsp. ginger
  • 1/8 tsp. cloves
  • 1/4 tsp. salt

  Preheat oven to 375 degrees F. Place the pumpkin, eggs, cream, brown sugar, and spices in the bowl of a food processor and process until smooth, or combine and beat well with mixer in a large mixing bowl. Pour the mixture into prepared pie shell and place on baking pan to catch any spills.
  Bake the pie at 375 degrees for 50 to 60 minutes or until the custard is set and the pie crust has browned, although the center will still look wet. A knife inserted about 1" from side of pan will come out almost clean.
  Place the baked pie on a rack to cool. Then cover and store in refrigerator until serving time. Store any leftovers in the refrigerator. Serve with vanilla ice cream or whipped cream made by whipping 1 cup heavy whipping cream with 3 tablespoons powdered sugar and 1 teaspoon vanilla.
